Broccoli Cheese Squares


Are you looking for a new item to add to your holiday feast? This is a family favorite and the best thing about these are that they are so versatile. They can be an hors d"oeuvre, a side dish or a great addition to brunch. They are also quick and easy to make, can be made ahead of time and warmed up with out losing anything in translation.

Here is what you need. The recipe makes 5 dozen.

  • 3 tablespoons butter

  • 1 1/4 cups broccoli chopped (fresh or frozen)

  • 3 eggs

  • 1 cup flour

  • 1 cup milk

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 6 cups (1 lb) grated cheddar cheese

  • 2 tablespoons chopped onion

Cooking Instructions:

Preheat oven to 350 degrees

Melt butter in a 9 x13 pan and spread to coat the bottom of the pan.

If you are using fresh broccoli, steam till tender and quickly cool in cold water and drain. With frozen broccoli, thaw and drain.

Combine eggs, milk, flour, salt and baking powder in large bowl and mix.

Stir in cheese and onion and broccoli.

Spoon into the baking pan and bake for 30-35 minutes.

After taking out of the oven, let rest for 10 minutes before cutting in to squares.

They taste delicious right out of the oven or can be refrigerated or frozen, warmed in the microwave as you need them.
