It's always exciting to look forward to new restaurant openings, especially when it's a celebrity chef. David Burke Hospitality Management (DBHM), the restaurant operating, and consulting company helmed by international award-winning chef David Burke, announced recently that it has signed an 11-year lease with Renaissance Hotel Partners for a 7,900 square foot space at The Opus, Westchester hotel, with a dedicated entrance and a street address of 121 Main St. in downtown White Plains. It will be occupied by a modern American steakhouse with Asian accents – Red Horse by David Burke – that will open in early January 2023. The 200-seat restaurant (with another 80 outdoors) will be the second steakhouse under the Red Horse banner, signaling Burke’s intention to grow the brand.
The space that was, for 11 years, BLT Steak will be reimagined by Burke and the DBHM team to incorporate characteristic elements of David Burke restaurants, as well as those of the burgeoning Red Horse brand. Among the former will be: a massive pink Himalayan salt wall separating (but not hiding courtesy of a row of windows), the open kitchen from the dining room; eye-catching lighting fixtures and captivating artwork, some from Burke’s own eclectic collection, others obtained specifically for the new restaurant.
Red Horse decorative hallmarks will include bold red-and-white stirrup print wallpaper, an intriguing installation of hand-blown red glass rods and a copy of the oil painting of a ruby colored horse from Burke’s collection that inspired the name. A name that will become indelible to guests when they are greeted by a life-size red horse sculpture that Burke has commissioned.
The menu will mirror that of the original Red Horse in Rumson, NJ with a focus on prime beef dry-aged according to Burke’s Himalayan salt process, Patent US 7,998,517 B2. The menu will also feature a number of Burke’s signatures, such as: Popovers, Clothesline Bacon; Lobster Dumplings, Salmon Pastrami; Angry Lobster; and Pork Chops with Sandy Hook Clams Casino.
While the main entrance of the new Red Horse by David Burke will be at the 121 Main St. address, it will also have an entrance from The Opus, so it will be an on-site lunch, happy hour, dinner and weekend brunch option for hotel guests and residents of the Residences at The Ritz-Carlton, Westchester II.
“We are thrilled to welcome Red Horse by David Burke to The Opus, Westchester early next year,” stated Elizabeth Andrews, general manger of The Opus, Westchester. “Chef Burke’s culinary greatness and innovative vision will be an incredible addition to The Opus for our hotel guests and residents as well as the local Westchester community and beyond.”
Having concentrated primarily on his home state of New Jersey, where he has opened four restaurants since March of 2020, Burke is looking forward to expanding his presence in New York. The White Plains Red Horse will join his flagship David Burke Tavern on Manhattan’s Upper East Side, Red salt Room and King Bar in Garden City and Salt & Char and Morrisey’s lounge & Bistro in Saratoga on his NY restaurant roster.
“It’s an impressive and very flexible space in a great location,” said Burke of the future Red Horse site. “I’m very excited about it as launching pad for the expansion of the Red Horse by David Burke brand. And I’m looking forward to becoming involved in the Westchester Co. dining scene and more involved with the Hudson Valley’s.”
